[tbsp] means a tablespoon, which is roughly a 15 ml(roughly 1/2 fl oz) portion.

Mirin
Mirin is a weakly sweet seasoning similar to sake, made from Japanese distilled spirits and rice malt. It used to adding sweetness, shine, and luster to food.
Deep-fried tofu
Deep-fried tofu is made by cutting tofu into thin slices, draining off the water, and then deep frying in vegetable oil. There are two main types of deep-fried tofu. The thicker type is called 'Atsuage'. and, thinner type is called 'Abura-age'.
1.Cut vegetable
Cut spinach into 4 cm chunks.
2.Cut vegetable
Clean shiitake mushrooms of dirt and cut off the stem(the part from the stem to the base of the mushrooms),and finery chop the stem. Mark the shiitake mushrooms cross.
3.Cut vegetable
Cut green onion into diagonal slices about 1 cm wide.
4.Drain off
Pour boiling water over fried tofu to drain off oil.
**Be careful not to burn yourself!
5.Cut deep-fried tofu
Cut deep-fried tofu a little thinner.
**Deep-fried tofu expands when cooked.
6.Simmer
Put Japanese soup stock(Granulated),soy sauce,sake,mirin,and water in a pot and heat. Bring to a boil over medium heat,then turn off the heat.
7.Put in
Add udon noodles.
8.Put in
Add shiitake mushrooms,deep-fried tofu,green onions,and spinach.
*Fish cake and others are also available as desired.
9.Simmer
Simmer over low heat. Shortly before serving,grate the ginger and it is ready to serve.
