Mirin
Mirin is a weakly sweet seasoning similar to sake, made from Japanese distilled spirits and rice malt. It used to adding sweetness, shine, and luster to food.
Sake
Sake is an alcoholic beverage made by fermenting and straining rice, rice malt, and water, and is often used in cooking. When sake is used for cooking, cheap sake with weak aroma and sweetness is better.
1.Make sauce
Stir sugar,soy sauce,mirin,and sake in a saucepan.

Stir well and grate the garlic.

Bring to a boil over medium heat,then turn off the heat and add potato starch dissolved in water to make the sauce.
4.Cut vegetable
Cut carrots into thin strips.

Cut the onion into thin rounds.

Scrape off the skin of the burdock with the back of a knife.

Cut burdock root in 4 cm lengths into small pieces.
8.Remove the lye
Soak the cut burdocks in water for a while to remove the lye.

Slice shiitake mushrooms into small pieces.

Cut the rinsed crown daisy into 4-5 cm chunks.

Remove the burdock root from the water and wipe off the water with a dry cloth or kitchen paper.

Put the amount of dried small sardines and vegetables for one serving into a bowl and sprinkle tempura flour over all.

In other bowl,mix tempura flour with ice water to make batter.
*Stir to a consistency of sticky.

Put mixed dried small sardines and vegetables dusted with tempura flour in batter of a bowl and mix.
16.Deep fry
With a ladle,scoop out the batter,dried small sardines and vegetables mixture.
17.Deep fry
When the oil reaches 160 degrees Celsius,drop gently the mixture from the ladle into the oil.
18.Deep fry
Deep fry them,turning it inside out,and when crispy, lift it out of the oil. Serve with sauce.
