About Ingredients

Mirin

Mirin is a weakly sweet seasoning similar to sake, made from Japanese distilled spirits and rice malt. It used to adding sweetness, shine, and luster to food.

Sake

Sake is an alcoholic beverage made by fermenting and straining rice, rice malt, and water, and is often used in cooking. When sake is used for cooking, cheap sake with weak aroma and sweetness is better.

Shiso leaves

Shiso is a typical Japanese herb, a leaf similar to but different from Perilla(often used Korean food), with a unique flavor. Shiso has both red and green leaves, When shiso without specified no color means green shiso in Japan.

Pickled ume plum

Pickled ume plums is made by pickling ume plums in salt and red perilla leaves and then drying them in the sun.

How to cook

  • 1.Make the marinade

    Stir soy sauce,mirin,sake,garlic,ginger,and salt to make the marinade for the chicken meat.

  • 2.Cut meat

    Cut the chicken meat into bite-size pieces.

  • 3.Marinate the meat

    Put the chicken meat in the marinade and marinate for about an hour.

  • 4.Cut vegetable

    Cut the shiso leaves into small pieces to put on the fried chicken for finishing a dish.

  • 5.Cut vegetable

    Cut the crunchy pickled ume plum around seed into small pieces.
    **When removing the seed,be careful not to cut your hands with the knife.

  • 6.Cut vegetable

    Cut the pickled ume plum into small pieces so that they can be easily attached to the chicken meat.

  • 7.Pick out

    Pick out the chicken meat from the marinade for about an hour and put it in a strainer.

  • 8.Put

    Pick out the chicken meat from the strainer and put it in a plastic bag.

  • 9.Put

    Put the finely chopped crunchy pickled ume plums into the plastic bag containing the chicken meat.

  • 10.Put

    Put an appropriate amount of potato starch into the plastic bag containing the chicken meat and plums.

  • 13.Deep fry

    Heat vegitable oil and fry when it reaches about 160 degrees celsius. After frying,pick out and sprinkle with shiso leaves.

  • Tips

    After frying the chicken,cut it and make sure it is cooked all the way through.
