Mirin
Mirin is a weakly sweet seasoning similar to sake, made from Japanese distilled spirits and rice malt. It used to adding sweetness, shine, and luster to food.
Mentsuyu
This soup is used for Japanese noodles and is made mainly of soy sauce, Japanese soup stock, sake, mirin and sugar. Generally, 'Mentsuyu' called in Japan is ready-made products that is double or triple concentration. When using 'Mentsuyu', it is diluted with water.
1.Cut vegetable
Cut off about 1 cm (0.3 inch) of the eggplant head.
2.Cut vegetable
Cut the eggplant in half lengthwise.
3.Slit a vegetable
Cut a slit to hold the minced meat in the eggplant.
4.Slit a vegetable

Make shallow slits on the surface of the eggplant in a grid pattern for easy to soaking the sauce in at finally.
6.Grill
Grill the eggplant until lightly browned to soften. When done grilling,remove and set aside.
7.Stir
Put into a bowl,minced meat,onion,salt,pepper,and nutmeg.
8.Mix
Mix the ingredients so that they are evenly mixed.

10.Sprinkle
Sprinkle potato starch to the eggplant slits.

Put the meat into the eggplant slits.

13.Grill
Turn the heat to medium and brown the eggplant lightly on both sides until browned.
14.Roast
Add water (to taste) to the pan and steam roast the eggplant.

Steam roast over low heat for about 10 minutes.
16.Stir
Stir 1 tbsp of undiluted mentsuyu(3x diluted),grated ginger (with juice) and 1 tbsp mirin.
17.Pour sauce
Keeping the heat low,pour the sauce over the eggplant.
18.Grill
Grill it lightly over low heat and it is ready to serve. Since it is seasoned,it can be served as is without any seasoning.
